π Strawberry Cheesecake Bites Recipe No Bake
Any fan of the peanut butter and chocolate combo will be thrilled with these sweet bite-sized truffles made from Nutter Butter cookies, peanut butter, cream cheese, and powdered sugar, then dipped in melted chocolate and topped with colorful sprinkles or flaked sea salt. Get The Recipe.
Place the pan in the freezer for about 30 minutes so the crust is set. While the crust is freezing, in a medium bowl, or stand mixer, add the cream cheese, powdered sugar, and vanilla. Mix together until it is fully combined. Pour/spread filling over the crust and return to the freezer for 30-45 minutes.
Bring to a boil and cook over medium heat for about 10 minutes until the mixture is thick and reduced. Combine cornstarch and 2 Tbsp of water to make a slurry, take strawberry puree off the heat and whisk in the slurry. Bring mixture to a boil and let cook for 1-2 minutes until thickened. Let cool to room temperature.
